I've been trying to come up with a low carb way to make a crust for pizza. I have (for the 1st time) tryed the pie crust receipe in the Adkins book. I made it for a cheesecake and put finely chopped pecans on the top before adding the cheese mixture. It's in the oven as we speak. I'll let ya'll know. If your interested the sweetner in it is Splenda. But would love to make a pizza. That pie crust may work with adding some Italian seasoning, but will need something it make it not as crisp. Any ideas.

I'll reply to my own, to let you know the crust for the cheesecake was good, but don't try it with a pizza.

I've been making a MeatsaMeatsa for a couple of years now, when I get that pizza urge.

Thoroughly mix 1 egg into a pound or so of lean ground beef. Spread it out in a pie plate, pressing quite flat. Bake at 350 for 15 minutes or so or til fully done; take it out and drain any juices, set it aside to cool a bit (and leave the oven on). Assemble a half-cup or so of sugarfree tomato sauce (home-made is excellent), some oregano herb and basil to taste, favourite grated cheeses, pepperoni slices, green pepper, mushrooms, cooked italian sausage, dried chili flakes, whatever. Top as desired and pop it back into the oven until the cheese melts.

Voila! The only carbs are in the vegetables, cheeses and the tomatoe sauce. Very filling and tasty!
